Easy 3 Ingredient Coconut Date Rolls taste like gooey soft caramels, but are secretly healthy, paleo, and vegan! The perfect two bite dessert or snack!
These Coconut Date Rolls are a 10 minute treat that I am willing to bet can satisfy any sweet tooth with their sticky caramel flavor, crunchy almond center, and tropical coconut exterior.
And lean in really close for this part... these sweet little bites of soft caramel heaven are secretly healthy!
And they also happen to be impossibly easy to make. All you that stands between you and a plateful of your own Coconut Date Rolls is a food processor, three ingredients, and two simple steps.
All you have to do is pulse the dates in the food processor until they are sticky. Roll the date paste into balls, coat them in coconut, and top them with a crunchy almond. Then the most important step, pop one into your mouth and enjoy that sweet, sweet caramel flavor.
These Coconut Date Rolls transport me straight back to my childhood.
After dinner, I would always ask for a bowl of dates or a few Date Coconut Rolls as my post dinner treat. They were my dessert of choice for years. And who can blame me?! Even as a kiddo I thought they tasted just like caramel and loved that they didn't make me feel jittery after a bowl full.
And not much has changed since then. I still eat dates like they are going out of style. And after you get a taste of one of these Coconut Date Rolls I have a feeling you will, too!
