That's the one and I am here to tell you how to get this beauty on your table in under 30 minutes without any chopping or whisking involved. This Tofu Pineapple Stir Fry is part of our Freezer Meal February series and I am so here for it.
That's right, this saucy, bright, flavorful dish came straight outta the deep freeze.
Now, brace yourselves. The prep for this recipe is like incredibly complicated. Are you ready for it? Buckle your seatbelt. Here it is:
- Chop and dump all the ingredients into a freezer bag.
- Whisk together the gluten free sauce. Pour it into a small lidded container and drop it into the same bag.
- Throw this bag into your freezer and pat yourself on the back. You just assured weeknight dinner success in under 10 minutes.
And when you are cooking your Tofu Pineapple Stir Fry, things stay just as simple. You just pop the entire thing into a large pan and let the stovetop go to work for you. After a couple of stirs and 30 minutes, dinner is served!
If you like to enjoy your stir fry over rice, I am with ya! I like to cook white rice while the stir fry is doing its thing on the stove and like magic, they are both ready at the same time. Brown rice will take a little longer to cook, so if that's your grain of choice, start it about 10-15 minutes before you start the stir fry.

Tofu Pineapple Stir Fry is on your table in 30 minutes! This speedy weeknight dinner is full of veggies, sweet pineapple, and a bright ginger sauce.
Ingredients
- 1 package high protein tofu, cut into bite sized cubes
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 cups fresh or frozen pineapple chunks
- 1 cup chopped green beans
- ½ yellow onion, chopped
For the sauce:
- ¼ cup liquid aminos
- 3 cloves garlic, minced
- 2 tablespoons grated ginger
- 2 tablespoons maple syrup
- 2 tablespoons unseasoned rice vinegar
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons avocado oil
Instructions
Freeze the stir fry:
- Whisk all of the dressing ingredients together and transfer to a small freezer friendly lidded container. Set aside.
- Place all the stir fry ingredients into a large freezer zip top bag. Add in the lidded container with the sauce and zip shut. Store in the freezer until you are ready to get cooking.
Cook the stir fry:
- Remove the sauce from the bag and submerge it in hot water for 1 minute to help it pop out of the container. Add all the contents of the bag and the sauce to a large skillet. Cover and cook over medium heat until the vegetables break apart and are no longer one large vegetable ice cube, about 20-25 minutes. Remove the lid and continue to cook until the sauce is reduced, about 5-10 minutes. Serve over rice.
