And the best part... It's secretly easy. Oh and secretly healthy. Mind boggling, I know.
These Honey Almond Cereal Squares require just 8 ingredients that I always have in the pantry, and if your are a veteran to plant-based cooking, chances are you have everything on hand too.
If you don't, I can promise that each and every ingredient is a worthy investment. The item that is most likely not to be lining the shelves of your pantry is the phyllium husks. This oddly spelled ingredient is magic in this recipe. It is the hot to your chocolate. The wind in your sail. It is the glue that holds it all together.
But seriously with that last metaphor. Psyllium really does hold this recipe together. It works kinda like a flax or chia egg. It thickens and binds when moisture is present and helps us create these tasty little squares.
One thing about our Honey Almond Cereal Squares. They holds up so well. Like, gold medal status. If you like your cereal soggy (please tell me I'm not alone), you're going to have to wait a looooooonggggg time. These squares are perfectly crispy, light, and packed to the brim with flavor.

Description
Homemade cereal is officially a thing. I will whip up a big batch and store it in the freezer for fresh cereal any time I want it.
Ingredients
Dry Ingredients:
- ¾ cup almond meal
- 1 cup brown rice flour
- 2 tablespoons psyllium husks
- 1 teaspoon baking soda
- ½ teaspoon salt
Wet Ingredients:
- ⅓ cup honey
- 3 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350 degrees.
- Whist together all of the dry ingredients and set aside.
- In another bowl, whisk together all of the wet ingredients.
- Add the wet into the dry and stir to combine. You may need to knead the dough in order to fully incorporate the wet and the dry. Roll out the dough between two sheets of parchment paper, until it is about ⅛ inch thick. Remove the top sheet of parchment and cut the dough into squares, with a pizza wheel or a knife.
- Transfer the dough (still attached to the bottom piece of parchment) onto a cookie sheet. Bake for 15 minutes.
- Shut off the oven, crack the door and leave the cereal squares in the oven for 10-15 more minutes or until the squares are golden brown. Remove from the oven and allow to cook completely on the cookie sheet. Break apart the squares and store in a zip top bag or lidded container.
