Travel and lunchbox friendly cookie dough bites that provide some serious energy!
- 1/2 cup raisins (, soaked in hot water for 5 minutes and drained)
- 1 cup raw cashews
- 1 cup gluten-free oat bran
- 2 tablespoons coconut nectar ((raw) OR gluten-free brown rice syrup (not raw))
- 1 teaspoon cinnamon
- pinch salt
- Add the cashews to the bowl of a food processor. Pulse a few times until the cashews a course meal. Add in the remaining ingredients and process until a dough ball forms. Roll into roughly 12 cookie dough bites.
To increase their shelf life store your cookie dough bites in the fridge.
To keep the recipe raw, omit the coconut nectar.
