Scratch that. Pumpkin Spice season is HERE! Starbs busted out their PSL in AUGUST this year. Oh wait, what?! August. You mean summer? You mean sweet corn season? And while I am in full support of this early pumpkin train. I need one last minute to FULLY soak in the GOODNESS of summer produce.
Exhibit A: Sweet Corn Avocado Toast
Tangy crunchy grilled sourdough. Buttery mashed avocado. Sweet corn and mild shallots. Flaky sea salt. Fresh ground pepper. A drizzle of honey and a splash of white balsamic vinegar.

Sweet Corn Avocado Toast is a quick and healthy recipe to soak up all the best summer flavors! Buttery avocado gets mashed on tangy sourdough bread and then topped with sweet summer corn.
Ingredients
- 2 slices sourdough bread (gluten free, if needed)
- 1 avocado
- 1 teaspoon olive oil
- ½ cup corn (fresh or frozen)
- 1 tablespoon diced shallot
- ½ teaspoon honey
- Drizzle of white balsamic vinegar
- Salt
- Pepper
Instructions
- Toast your two slices of bread.
- While the bread is toasting. Add the avocado oil to a pan over high heat. Add in the corn and cook until tender and slightly charred. Remove from the heat and add to a bowl along with the shallot, honey, and a pinch of salt and pepper.
- Once the toast is ready, mash half of the avocado onto each piece. Top with a pinch of salt and a drizzle of the white balsamic vinegar. Divide the corn mixture between the two toasts and serve.

Holy mother in heaven, this was GOOD!! I used fresh sweet corn from my grandfather’s garden. I nearly fell out of my chair, it was so delicious. My boyfriend had to keep me from licking the plate. Will most definitely make again!
