- 2-3 tablespoons ricotta
- 1 tomato, sliced
- 1-2 teaspoons fresh herbs
- Salt and pepper
- Olive oil
Instructions

Drizzle your bread with olive oil, place in a preheated cast iron pan, grill pan, or on the grill. Grill both sides, adding more oil if needed, until golden brown.

Layer the toast with ricotta, tomatoes, salt, pepper, herbs and a drizzle of olive oil.
Notes
Tomatoes: If tomatoes are out of season, use campari tomatoes, a smaller size on-the-vine tomato that usually come in a clear plastic container or box.
