Gluten free sugar cookies that are light, fluffy, & spread generously with strawberry buttercream! These soft baked cookies stay soft, moist, & fresh for a week!
Whisk the dry ingredients together in a bowl.
Beat the butter & sugar until they're nice & fluffy.
Mix in eggs, yogurt, vanilla & almond extracts.
Add flour & mix until dough forms. Chill for 2 hours.
Scoop the dough onto a prepared cookie sheet.
Gently flatten each cookie with a wet glass.
Bake cookies until the edges begin to brown.
Once cool, frost generously & top with sprinkles.
