Cook veggies until tender. Add in seasonings.
Stir in the broccoli, frozen peas, and flour.
Pour in the milk & simmer until the filling thickens.
Cut the puff pastry using your ramekins as a guide.
Fill ramekins generously with pot pie filling.
Top with puff pastry and brush with vegan egg wash.
Sprinkle with salt, pepper, and a sprig of thyme. Bake.
