Cookie Dough Protein Bites taste like cookie dough with the health benefits of a protein bar! Paleo, vegan and only 4 ingredients!

There are a few things I doubt I will ever outgrow. Jumping on trampolines. Covering my eyes in scary movies. And eating cookie dough straight off the spoon.

These soft maple sweetened bites are every cookie dough lovers dream. I live for the moment where I pull one straight outta the fridge and pop it directly into my mouth.

They are soft and full of the perfect nutty sweet mix of peanut butter and maple flavor. Studded with loads of dark chocolate chips that first crunch and then melt in your mouth. They are delightfully sweet, a touch salty, and somehow still healthy!

How to make Cookie Dough Protein Bites:

You'll only need four simple ingredients to bring these bites to life!

Gather your maple syrup, brown rice protein, chocolate chips and peanut butter. The best PB for this recipe is the kind that needs to be stirred, but is still drippy at room temperature. I like this one and this one.

Add all your ingredients to the bowl and stir. Roll them into balls and try your very hardest not to eat half of the dough. I have yet to succeed at this.

Store those bites in the fridge to make them last for up to 1 week! But who am I kidding. Chocolate chip peanut butter protein cookie dough bites?! There is NO WAY they will last that long!

Description

Cookie Dough Protein Bites taste like cookie dough with the health benefits of a protein bar! Paleo, vegan and only 4 ingredients! Made with peanut butter, brown rice protein powder, naturally sweetened with maple syrup, and studded with dark chocolate chips.


Ingredients

Scale
  • ½ cup unsweetened brown rice protein powder
  • ¼ cup peanut butter
  • ¼ cup maple syrup
  • Pinch salt
  • 2 tablespoons mini dark chocolate chips


Instructions

  1. Add the protein powder and salt to a bowl and whisk them together. Add in the peanut butter and maple and stir until combined. Add in the chips and stir again to mix them in. The dough can be quite thick, so I find it easiest to get in there with my hands to mix it all together.
  2. Roll the dough into 10 round balls and store in the fridge for up to 1 week.
