Description

Vegan Thousand Island - every bit of the sweet creamy tang of the original in this dairy-free version!


Ingredients

Scale
  • 1/2 cup raw cashews, soaked overnight and drained
  • 6 tablespoons water
  • 4 tablespoons ketchup
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons sweet pickle relish
  • 2 tablespoons finely minced onion

Instructions

Blend the cashews, water, ketchup, vinegar, salt and pepper until creamy.

Transfer the dressing to a bowl and stir in the relish and onions.


Notes

Cashews: Soak the cashews according to the directions in this post. You can soak them overnight or have them ready in 15 minutes! If you have a Vitamix, you can skip soaking.

Storage: Store leftover dressing in a lidded container for 7-10 days in the fridge. Stir before using.
