Description

Watermelon Jicama Salad is packed with sweet melon, crispy jicama, bright lime juice, and a kick of spice from a pinch of cayenne! This quick summer salad is ready in 10 minutes.


Ingredients

Scale
  • 4 cups cubed watermelon
  • 2 cups cubed jicama
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 3/4 teaspoon salt
  • 1/4 teaspoon cayenne (omit if you want a spice-free salad)
  • 2 teaspoons lime zest

Instructions

  1. In a bowl, whisk together the lime juice, olive oil, salt, mint and lime zest.
  2. Toss together the watermelon and jicama. Top with the dressing and toss to combine.
  3. Chill in the fridge for 4 hours and serve topped with extra mint and lime zest, if desired.
