Description

30 Minute Sweet Potato Tofu Hash has the perfect mix of mildly spicy southwest flavors, sweet potatoes and protein packed tofu! The best brunch around!


Ingredients

Scale
  • 1 large sweet potato, cut into bite sized cubes
  •  1 cup water
  • 2 tablespoons avocado oil
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 16 oz high protein tofu (sometimes called super firm), cut into bite sized cubes
  • 1 bell pepper, chopped
  • 1 tablespoon mild chili powder
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cinnamon
  • 2 cups chopped kale

Instructions

  1. Add the sweet potato and water to a large skillet over high heat. Once the water starts to simmer, cover, reduce the heat, and continue to simmer until all the water has evaporated and the sweet potato is fork tender, about 5-7 minutes.
  2. Uncover and increase the heat to medium-high. Add in the avocado oil, onion, and garlic. Cook, stirring  often, until the onion is translucent, about 5-7 minutes.
  3. Add in the remaining ingredients and cook until warmed through. Serve with optional hot sauce, salsa, or avocado. Enjoy!
