This, this right here is my favorite breakfast. Even with it's humble monochromatic, messy looks, this is the breakfast I can't stop thinking about!
It is bites of tender sweet potatoes with crispy caramelized edges and soft sweet centers, toothsome tofu that soaks in all the southwest flavor this dish has to offer, bits of sweet bell pepper, and fresh pops of kale. All cooked in a chili powder, cumin, smoky paprika spice combo that is equally irresistible and easy.
A good douse of hot sauce, a juicy squeeze of lime, a side of toast. We are in breakfast business!
What ingredients are in Sweet Potato Tofu Hash?

There are two tricks to perfect hash in record time.
First, opt for High Protein Tofu which also operates under the name Super Firm Tofu. Whatever the name, it is always stored in a vacuum sealed bag and not in water. This tofu has a nice firm texture right outta the bag and does not need to be pressed, saving us valuable time in the kitchen!

Ingredients
- 1 large sweet potato, cut into bite sized cubes
- 1 cup water
- 2 tablespoons avocado oil
- ½ onion, diced
- 2 cloves garlic, minced
- 16 oz high protein tofu (sometimes called super firm), cut into bite sized cubes
- 1 bell pepper, chopped
- 1 tablespoon mild chili powder
- 1 tablespoon cumin
- 1 teaspoon salt
- ½ tablespoon garlic powder
- ½ tablespoon onion powder
- ½ teaspoon smoked paprika
- ¼ teaspoon cinnamon
- 2 cups chopped kale
Instructions
- Add the sweet potato and water to a large skillet over high heat. Once the water starts to simmer, cover, reduce the heat, and continue to simmer until all the water has evaporated and the sweet potato is fork tender, about 5-7 minutes.
- Uncover and increase the heat to medium-high. Add in the avocado oil, onion, and garlic. Cook, stirring often, until the onion is translucent, about 5-7 minutes.
- Add in the remaining ingredients and cook until warmed through. Serve with optional hot sauce, salsa, or avocado. Enjoy!
