Description

This Vegan Tuna has an incredible flaky texture and rich tuna flavor! Great on a sandwich, with crackers, or on a salad. Made in 10 minutes with 6 ingredients in one bowl.


Ingredients

Scale
  • 1 (14oz) can hearts of palm
  • 3 tablespoons vegan mayo
  • 1 tablespoon chopped dill pickle
  • 2 teaspoons Dijon mustard
  • 1/4 teaspoon garlic powder
  • Pinch salt, adjust to taste
  • 1/2 teaspoon lemon juice

Instructions

  1. Drain the hearts of palm and rinse them well. Dry them off to remove excess moisture. Chop them into small "tuna-like" bits. I like to quarter each one lengthwise to create 4 long and thin sticks and then dice.
  2. Add everything to a bowl and stir to combine. Taste and adjust seasonings. Enjoy as in a sandwich, with crackers, or on a salad - however you would traditional tuna!

Notes

Mayo: You can try also use regular mayo, greek yogurt, vegan yogurt... you get the idea, something cool and creamy.

Lemon juice: You can also use pickle brine! A personal favorite :)
