This vegan tuna recipe really is incredible! It has the hallmark flaky tuna texture thanks to our secret ingredient - hearts of palm! Tossed with a little mayo, chopped pickle, and seasonings, this sandwich is remarkably close to the taste and texture of real tuna.
It is great as a sandwich with some good bread, perfect with crackers and light and flavorful atop a salad!

Ingredients and substitutions:
- Hearts of Palm - this veggie has the PERFECT texture and neutral flavor to mimic tuna.
- Vegan mayo - or regular mayo, greek yogurt, vegan yogurt... you get the idea, something cool and creamy.
- Chopped dill pickle - capers or sweet pickle relish also work, depending on how you like your tuna.
- Dijon mustard - my husband likes regular mustard in his tuna. I am partial to dijon.
- Garlic powder - or onion powder if you'd like.
- Salt
- Lemon juice - or pickle brine!
How to make vegan tuna:
Prep the hearts of palm: Drain the hearts of palm and rinse them well. Dry them off to remove excess moisture. Chop them into small "tuna-like" bits. I like to quarter each one lengthwise to create 4 long and thin sticks and then dice.
Stir and serve!: Add everything to a bowl and stir to combine. Taste and adjust seasonings.

- With crackers - I spent years eating my tuna with saltine crackers exclusively. Still delicious.
- On a salad - so light and fresh.
- Grilled - butter that bread and grill it on both sides for an amazing vegan tuna melt! Bonus points for adding sliced tomato and cheese.
Storage:
Store any leftovers in a lidded container in the fridge for up to 5 days.
I do not recommend freezing.
