Some times I feel like I need lean heavy on the greens and there is no time like the present. After my Texas trip, aka taco eating mission (which I crushed btw), I am craving all kinds of green crunchy things. It is starting to feel like spring and my body is saying eat all the greens.
So I will.
But... Sometimes greens can be boring.
Yes, even someone who genuinely enjoys a green smoothie can get tired of the same old. When I am on a uber healthy kick, I will often have the same smoothie and salad each day, until my body starts to crave something more substantial... or I get bored of eating the same thing. What can I say? I have a thing for flavor!
That is when I start mixing things up, throwing new things in the blender, and this smoothie is the beautiful result. Cue the Mint Chocolate Chip Green Smoothie. Tastes like a milkshake, but hearty and healthy enough for a weekday breakfast. It is creamy and minty with delightful chocolate pieces swirled throughout. Talk about starting your day off right!
This smoothie's superpower ingredient is a handful of raw cashews. When you blend, the cashew pieces break down and become incredible creamy, giving this morning shake a milkshake like consistency. Plus, they are loaded with protein and healthy fats to keep you full until lunchtime. So, its basically magic.
Now, if you are one of those a won't-touch-a-smoothie-with-a-10-foot-pole-types and detests the very thought of drinking pluverarized greens for breakfast, I get you. It is kinda a weird concept. This smoothie is like drinking your favorite milkshake for breakfast, only healthy! If you don't have a high speed blender, I recommend soaking the cashews over night before blending to ensure a creamy texture.
Ingredients
- 2 cups lightly packed spinach
- 2 frozen bananas (, peeled and cut into slices)
- 6-10 mint leaves depending on desired taste
- 2 teaspoons raw cacao powder or carob powder
- ¼ cup raw cashews
- ¾ cup water
Instructions
- Add all the ingredients to a high speed blender and blend until smooth.
