Confession time: I haven't always liked granola.
On yogurt, with milk, or eaten by the handful, it never quite hit the spot. It was too sweet or too cinnamony or too fruity. The texture was too sandy or too clumpy or too chewy. No matter how I spun it, I was never keen on the sweet stuff.
So now we are all wondering the same thing: why is this self-proclaimed granola pessimist trying to get us to make granola at home? Well, friends, that's because once this Paleo Coconut Almond Granola walked into my life, I've never been the same!
One bite of this Paleo Coconut Almond Granola is all it took to make a bonafide granola lover out of me.
The reason my heart pitter patters and my stomach does flip-flops when I see this granola is that it is made without oats. The one essential granola ingredient is left out of this recipe, and it makes all the difference.
In our Paleo Coconut Almond Granola recipe, we ditch the grains in favor of nuts and seeds, which magically remedies all of the afore mentioned textural problems granola can often face. Instead of too clumpy, too soft, or too crisp clusters, this granola is perfectly crunchy, but not hard, every single time.
As a bonus, removing the oats also makes granola even safer for the gluten free gang, since oats can sometimes be cross contaminated with gluten.
When choosing the sweetener for Paleo Coconut Almond Granola, we have two great options: maple syrup or honey.
Maple syrup is the best option for those looking to keep it vegan and adds a wonderful color and aroma to the Paleo Coconut Almond Granola.

Paleo Coconut Almond Granola is a 20 minute breakfast recipe that is so good, it will make you into a morning person! 8 healthy ingredients are all you need for this easy, grain-free, and vegan recipe. Use it to top yogurt and smoothies at brunch, or eat it as a cereal.
Ingredients
- 4 tablespoons maple syrup
- 2 tablespoons avocado oil
- 2 teaspoons vanilla extract
- 1 teaspoon almond extract
- 1 teaspoons cinnamon
- ¼ teaspoon salt
- 1 cup coconut flakes
- 1 cup sliced almonds
- ¼ cup flaxseed meal
Instructions
- Preheat the oven to 350 degrees.
- In a bowl, whisk together the maple syrup, avocado oil, vanilla extract, almond extract, cinnamon and salt. Add in the remaining ingredients and stir well to coat. Spread the granola out on a baking tray and bake for 10 minutes. Stir the granola and bake for another 6-8 minutes or until it is golden brown. Allow the granola to cool completely before serving.
