This Starbucks copycat Pineapple Matcha Drink is sweetened with ginger syrup and topped with coconut milk and a touch of pineapple juice.

For the ginger syrup:
- 1/4 cup sliced ginger
- 1/2 cup water
- 1/2 cup sugar
To make a pineapple matcha drink:
- 2 tablespoons ginger syrup
- 3 tablespoons pineapple juice
- 1 teaspoon matcha
- 3/4 cup coconut milk - from a carton, not a can
Instructions
Add the sugar, water, and sliced ginger to a small saucepan over medium heat. Bring to a simmer, cover, and simmer 10 minutes until fragrant and golden.
Whisk together the pineapple juice, matcha, and 2 tablespoons of ginger syrup. To make sure your matcha doesn't have any clumps, you can use a frother or blender to get it smooth.
Pour the matcha mixture into a glass with ice. Top with coconut milk and enjoy!
