This Starbucks copycat Pineapple Matcha Drink is sweetened with ginger syrup and topped with coconut milk and a touch of pineapple juice.

This pineapple matcha drink is an exact replica of the Starbucks favorite. It has a sweet green tea flavor with brightness from matcha, a little zing from ginger, and creaminess from coconut milk. The perfect summer drink!

Ingredients and substitutions:

  • Fresh ginger
  • Sugar - I used organic cane sugar. You can also use granulated sugar or a sugar substitute like Monkfruit Sweetener.
  • Matcha - use ceremonial grade.
  • Pineapple juice - I like these smaller cans from Trader Joe's.
  • Coconut milk - from a carton, not a can. I use unsweetened, but you could use sweetened for an even sweeter drink.

How to make a pineapple matcha drink:

Make the ginger syrup: Simmer the sugar, water, and sliced ginger for 10 minutes until fragrant and golden.

Whisk together the matcha mixture: In a glass measuring cup, whisk together the pineapple juice, matcha, and 2 tablespoons of ginger syrup. To make sure your matcha doesn't have any clumps, you can use a frother or blender to get it smooth.

Top with coconut milk: Pour the matcha mixture into a glass with ice. Top with coconut milk and enjoy!

Storage?

You can make several pineapple matcha drinks ahead of time and store them in the fridge for up to 5 days. I usually store them in a mason jar.

Or you can store the components separately. The ginger syrup will keep for up to 2 weeks. Pineapple juice, for up to 1 week.

Matcha is Japanese green tea powder used to make tea, lattes, and more! It has a rich green tea flavor and boasts many health benefits! With less caffeine than coffee and more l-theanine it creates a more even alertness, without the typical jitters or post-coffee crash.

Matcha is high in antioxidants, boosts brain function, and can even prevent cancer (source), all while tasting absolutely delicious! Yes please!

My go-to matcha brands are Aiya Matcha, Matcha Love, and Do Matcha which can often be found in health food stores. I order the other two brands online. Once you open your matcha, store it in the fridge for the longest shelf life.

What type of matcha should I use?

For drinks, you want to use ceremonial grade matcha. It is the highest quality matcha and had the best flavor. In contrast, culinary grade matcha is a lower quality with a slightly bitter flavor. It is fine to cook or bake with, but should not be used in lattes or drinks.
