The crispy sugary crunch of a churro + the soft pillowiness of a perfect donut + the warming flavors of pumpkin spice all get wrapped up into these Pumpkin Spice Churro Donuts which are basically everything I've ever wanted to eat in the perfect 4-bite form.

Plus, these delectable Pumpkin Spice Churro Donuts are secretly healthy thanks to being made with high-quality ingredients, natural sweeteners, and being baked instead of fried.

Seconds are encouraged.

Another really cool thing about these Pumpkin Spice Churro Donuts? I was able to have all the ingredients for this recipe delivered right to my door. The ingredients went straight from my porch to my kitchen all without having to change out of my pajamas. And Pumpkin Spice Churro Donuts baked and eaten in pajamas = WINNING!

I was able to snag all the ingredients online at iHerb, a new-to-me site that sells every single natural ingredient your heart could ever desire! Like, 5,000 of them! How did I not know about this sooner?! It's basically a healthy bakers DREAM!

A few of my favorite finds were juicy dates to naturally sweeten the donut batter, coconut sugar for that signature (but healthier!) churro crunch, and gluten free oat flour that is packed with whole-grain nutrition and gives our donuts the perfect cake-y texture.

Ingredients to make pumpkin spice churro donuts like coconut oil, pumpkin pie spice, dates, oat flour, coconut sugar, canned pumpkin puree, and maple syrup.

Description

Pumpkin Spice Churro Donuts are a decadent dessert that is secretly healthy. This recipe is baked, not fried and made with natural sweeteners!

Ingredients

Scale

Wet ingredients:

  • ¾ cup non-dairy milk
  • 1 cup packed pitted medjool dates
  • ½ cup pumpkin puree
  • ¼ cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon apple cider vinegar

Dry ingredients:

  • 2 cups gluten free oat flour
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon baking soda
  • ½ teaspoon salt

For the churro coating:

  • ⅓ cup melted coconut oil
  • ½ cup coconut sugar
  • ½ teaspoon pumpkin pie spice

Instructions

  1. Preheat the oven to 350 degrees. Grab a mini donut pan and rub each donut cup with a thin layer of coconut oil to prevent sticking. Set aside.
  2. Add all of the wet ingredients into a high-speed blender. Blend until smooth, scraping down the sides as necessary. Add in the dry ingredients and blend until well mixed. Spoon the batter into the donut cups and bake for 12 minutes or until the donuts have risen and a toothpick inserted into the thickest part of the donut comes out clean. Let the donuts cool for 5 minutes in the pan, then invert the pan to release the donuts.
  3. While the donuts are cooking, melt the coconut oil in one bowl and mix the coconut sugar and pumpkin pie spice together in a second bowl. Once the donuts are cool enough to touch, dunk them into the melted coconut oil, coating all sides, and let the excess drip off. Next place the donut in the coconut sugar mixture and toss to coat all sides evenly. Place on a wire rack to cool until the coconut oil and sugar are set. Enjoy.

These look delicious went out to buy everything to make them but could not find gulent free oat flour at Eholefoods. Can we substitute it with gluten free coconut flour? Or can you give me the brand you use.
    Thank you.

HI Jessica! I buy my oat flour from Bob's Red Mill, and for this recipe, I ordered it from iHerb, though you can find it on their website as well. Since coconut flour is very dry and crumbly, I don't think it would be a good substitute. The oat flour makes these donuts light and fluffly while also helping to bind them together. Happy baking!
