Grapefruit Avocado salad is a refreshing and juicy salad with layers of grapefruit, buttery avocado, shaved fennel, fresh basil, and a drizzle of good olive oil, salt and pepper.
Ingredients

- 2 ruby red grapefruits - cut into segments (this is a great segment-cutting guide!)
- 1 large or 2 small avocados, sliced
- 1/2 cup sliced fennel
- 1/3 cup shaved fennel⠀
- A handful of small basil leaves (or a few torn larger leaves)
- Drizzle of good olive oil⠀
- Salt and pepper⠀
Instructions
- Arrange the grapefruit and avocado on a serving plate. Top with shaved fennel and basil leaves. Drizzle with good olive oil and sprinkle on salt and pepper. ENJOY!
