Description

This Spiked Caramel Apple Cider Cocktail tastes like a caramel apple on a stick, but with a splash of rum for good measure! A homemade no-cook caramel sauce, made of dates, coconut milk, and spices, adds a real kick of Fall flavor!


Ingredients

For the caramel sauce:

  • 1 cup packed pitted medjool dates
  • 1/3 cup full fat coconut milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons pie spice

For the cocktail:

  • 2 cups spiced apple cider
  • 4 oz spiced rum
  • 1/4 cup caramel sauce

Instructions

For the caramel:

  1. Add the dates to a bowl and cover with boiling water. Let sit for 10 minutes.
  2. Drain the dates and add them along with the remaining ingredients into a high-speed blender. Blend, scraping down the sides as necessary, until the caramel is a smooth even sauce.

For the cocktail:

  1. Add all the cocktail ingredients into a shaker with ice. Shake until chipped. Divide the drink between two ice-filled glasses and serve.
