One of my fondest childhood memories is going to Greenbluff each year. Greenbluff is an apple-picking festival that takes place each October in my hometown. Families and friends head out to pick apples, hunt for pumpkins, sip cider, and let's not forget the pumpkin donuts.

It sounds as dreamy as it is.

But the best part of the day is biting into a freshly dipped caramel apple after coming in from picking apples in the fields. It is the tasty reward for a day well spent. The caramel apples at Greenbluff are one of a kind. The caramel is soft and chewy. They will serve it dipped on a stick (what I always went for!) or sliced with caramel sauce poured on top (what my more well-mannered sister always went for.)

This Spiked Caramel Apple Cider Cocktail is a play on the Greenbluff caramel apples, with an adult twist and a lot less mess - I still remember trying to get caramel sauce out of my hair.

This cocktail is made with Greenbluff cider, but you can pick up any local apple cider that you can find. Bonus taste points if it comes straight from an apple farm - it is an entirely different experience than the pasteurized store-bought bottles.

Second to some good cider, caramel sauce is really what makes this Spiked Caramel Apple Cider Cocktail shine. It adds sweetness and that classic caramel apple flavor.

This no-cook version uses dates, coconut milk, spices, and good quality vanilla for healthier and easier homemade version. No need to grab out a pot and use the stove, this no-cook version can be made in just a few minutes.

You will have some leftover caramel sauce, so do what needs to be done: slice up and apple and start dipping.

Ingredients

Scale

For the caramel sauce:

  • 1 cup packed pitted medjool dates
  • ⅓ cup full fat coconut milk
  • 1 teaspoon vanilla extract
  • 2 teaspoons pie spice

For the cocktail:

  • 2 cups spiced apple cider
  • 4 oz spiced rum
  • ¼ cup caramel sauce

Instructions

For the caramel:

  1. Add the dates to a bowl and cover with boiling water. Let sit for 10 minutes.
  2. Drain the dates and add them along with the remaining ingredients into a high-speed blender. Blend, scraping down the sides as necessary, until the caramel is a smooth even sauce.

For the cocktail:

  1. Add all the cocktail ingredients into a shaker with ice. Shake until chipped. Divide the drink between two ice-filled glasses and serve.
