Herbs de Provence Roasted Potatoes are a charmingly herby, perfectly golden, crispy and creamy side dish. Made with just 6 ingredients and 10 minutes of hands on time!

Roasted potatoes make me weak in the knees. Crispy browned skins, creamy and fluffy interiors. Need I say more? We have all fallen under the roasted potato spell, and if you haven't, today is your day.

These potatoes are crispy from a nice drizzle of olive oil, irresistibly salty, perfectly golden crunchy, melt-in-your-mouth, with tons of flavor from the Herbes de Provence and good olive oil.

Ingredients in Herbes de Provence Roasted Potatoes:

  • Potatoes - Yukon golds, baby red, fingerlings, or purple potatoes would all be nice. Any potato with thin skin will do.
  • Garlic
  • Herbes de Provence - more on this herb blend below!
  • Sea salt
  • Black pepper - freshly ground brings the best flavor
  • Good olive oil - something that is nice and fruity or peppery. You'll taste the added flavor in the finished dish.

What is Herbes de Provence?

In this recipe, it is our one stop shop for FLAVOR!

It is a dried herb blend that is available in most grocery stores. Think of it as a cousin to Italian Seasoning with a charming French twist.

It usually contains a fragrant blend of dried thyme, savory, oregano, rosemary, marjoram, and parsley. Some (and my favorite!) blends include a touch of lavender.

How do you make herb roasted potatoes?

It couldn't be simpler. Chop the potatoes into half inch cubes and toss with olive oil, garlic, salt, and our one and only, Herbes de Provence.

Spread the potatoes out on a baking sheet and roast for about 25 minutes until they are golden.

Top with an extra sprinkle of chopped parsley if you'd like!

Ingredients

Scale
  • 4 cups chopped potatoes, any thin skinned variety like gold, red, or fingerling
  • 4 cloves garlic, roughly chopped
  • 2 tablespoons good extra virgin olive oil
  • 2 teaspoons Herbs de Provence
  • 1 teaspoon salt
  • Pinch pepper


Instructions

  1. Preheat oven to 450 degrees. Line a baking sheet with parchment paper for easy cleanup.
  2. Toss all ingredients together in a large bowl. Arrange tossed potatoes onto your baking tray bake for 25-30 minutes or until the potatoes are golden brown and tender.

      Hi Samia! I don't since I like the added nutrients in the peel and don't mind the texture. Either peeled or unpeeled, the potatoes will be delicious :)
