Quinoa Veggie Bowls with Tahini Ranch are packed with crunch veggies, fluffy whole grain quinoa, and smothered in a healthy and dairy-free ranch dressing.

Is there any other way to eat your veggies than perched on top of a light and fluffy still warm grain like quinoa and smothered in delightfully creamy tahini ranch dressing? If you answered yes, well technically you're right. But try this salad and you'll be with me on this.

It might not be the only way to eat your veggies, but it is the best.

And Quinoa Veggie Bowls are a weeknight meal if I've ever seen one. The veggies are served raw for so much crunch factor, but this delicious twist also means you get more time back in your evening.

Tonight is the night to read a book, have a glass of wine, take a bath. Maybe do all three at once? Tonight is not the night to roast, sauté, or steam veggies. Raw veggies have our backs.

And our favorite quick whole grain, quinoa, is loaded with texture, flavor, and so much good-for-you fiber and protein, but is ready in 20 minutes max.

Can we say dinnertime MVP?

Then comes the tahini ranch. This thick and creamy perfectly nutty and ranch-y dressing might even be ready to go in your fridge. If not, it still only takes 10 minutes to whip up.

Then the magic recipe is this: Bowl. Still warm quinoa. Crunchy fresh veggies. Loads of tahini ranch dressing. Devour your Quinoa Veggie Bowls and own the rest of your night.

And bonus: this makes the absolute best meal prep! Divide any leftovers into lidded containers and store them in the fridge. Our quick weeknight dinner just became tomorrows quicker lunch. Can this get any better?

Description

Ingredients

Units Scale
  • 6 cups cooked quinoa
  • 6 cups chopped raw veggies (I used broccoli, cabbage, tomatoes, carrots, and cucumber)
  • 10 Minute Tahini Ranch Dressing

Instructions

  1. Cook the quinoa according to the package directions.
  2. While the quinoa is cooking, chop your veggies and whip up a batch of 10 Minute Tahini Ranch Dressing.
  3. Divide the warm quinoa between the bowls. Top with the veggies and lots of Tahini Ranch and enjoy!
