This is your morning coffee and breakfast in one that magically tastes like dessert.

On sip in, you'll call me a fool for saying this dessert shake is actually healthy breakfast. But pinch yourself and take another sip. This smoothie is packed with benefits, is vegan, paleo, and dairy-free.

The cashews give it a ridiculously creamy texture while adding healthy fats to keep you full and satisfied.

Coffee doesn't just give you an energy boost (though, thank goodness for that!), it also is packed with antioxidants that are great for brain health.

Then we sneak in some cauliflower (which if you haven't tried it, sounds RIDICULOUS!) to thicken up our Java Chip Smoothie and add some mega nutrients without changing the flavor or adding in extra sugars.

Then cacao nibs are a healthy swap for chocolate chips. All the chocolate flavor, none of the sugar.

Description

Java Chip Smoothie tastes like a healthy paleo frappuccino that you can enjoy for breakfast! A creamy coffee base is flecked with cacao nib chocolate chips.


Ingredients

Scale
  • 4-5 large medjool dates
  • 1 cup frozen cauliflower
  • ½ cup almond milk
  • ½ cup strong coffee, cooled (or cold brew!)
  • ⅓ cup ice
  • ¼ cup raw cashews
  • 1 teaspoon cacao nibs
  • 1 teaspoon chia seeds (optional)
  • 1 serving vanilla protein powder (optional)

Instructions

  1. Add all the ingredients except the cacao nibs into a high speed blender and blend until smooth and creamy.
  2. Add in the cacao nibs and blend on medium until the caca nibs are broken up into smaller  chocolate chip like pieces. Enjoy!
