Can you believe it's almost Christmas! I have been diligently counting down the days until the very merry holiday. The presents are wrapped, my suitcase is packed, and all that is left to do is hop on a plane.

If you are looking for some last minute holiday recipe inspiration like I am, here is a list of 10 plant-based recipes that will look great on your holiday table.

If eating all the Christmas cookies is wrong, then I don't want to be right. Peanut butter adds a fun twist to this traditional holiday cookie which deserves a spot on your holiday cookie tray.

Is there a holiday out there that doesn't go well with potatoes? Mashed, fried, or roasted, spuds are always a crowd pleaser. Toss them in the oven with Herbes de Provence and get ready to watch them disappear.

Oil-free, gluten-free, vegan and SO easy to make! Just throw all the ingredients in a pot and boil!

Less than 20 minutes and 10 ingredients and this side is ready!

Number six: Italian Brussel Sprouts

I always try to include plenty of green on the table to avoid a post dinner food comma. Okay, I just lied. It's so I feel less guilty when I am on cookie number three. Regardless, these Brussels sprouts are filled with classic and delicious Italian flavors and white their red and green colors, they even look like Christmas.

This recipe is full of nutty toasted rice and crunchy pine nuts. It pairs well with SO MANY entres!

Number seven: Pine Nut Pilaf

Mark this one down as my favorite rice dish to date. It is nutty, delicious, and the pine nuts elevate this dish from every day rice. The best part is that this dish goes with just about anything you'll be serving.

These gluten-free and vegan treats are to die for!

Number eight: Rum Cake Cookies

All the flavor of rum cake in a two bite treat. Thanks to the almond meal in the recipe, these cookies are moist and cakey. Plus the extra moisture keeps these cookies soft and fresh, making then the perfect fit for your holiday cookie tray.
