How to make a Gluten Free Mug Cake:
Friends, this could not be easier!
Mix dry ingredients: Add the dry ingredients right to your mug. Stir with a whisk until evenly mixed.
Stir in wet ingredients: Add the wet ingredients to the dry and mix until a batter forms.
Microwave: Place in the microwave for 1 minute. Remove, let cool slightly, and enjoy!
Leftovers?
This mug cake is best eaten immediately. If you have any leftovers, cover them with plastic wrap and they will keep on the counter for 1-2 days.
Topping ideas!
This gluten free mug cake is wonderful on it's own, but toppings are an added bonus! Try topping with...
- More sprinkles - never a bad thing!
- Your favorite vegan ice cream
- Or coconut whipped cream
- Chopped nuts
- A drizzle of nut butter
Choosing the right mug 101
When it comes to mug cakes, the mug is important. Too small and you'll have overflow. Too big, and the mug cake won't cook as evenly.
For best results, I like an 8-12 ounce mug. In my mug cabinet, these are some of the smallest mugs I own. So when in doubt, choose a smaller mug.
Ramekins of a similar size will also work.
