As someone who lives in the PNW, I have eaten my way through the Portland hot spots several times, and can say without a doubt that Tusk is one of my all time favorite joints. The atmosphere is gorgeous, the servers are spectacular, and the Mediterranean food... to die for!
On my first visit I couldn't help but order a variety of dishes off the menu. We ate the best hummus with homemade crackers, a delectable beet and pistachio salad, and a variety of skewers, but the star of the show was without a doubt their chickpea fries. They were crisp on the outside, but soft and creamy on the inside. We showered them with lemon and dunked them in black lime aioli. I was in heaven.
And after previously eating my entire weight in their silky smooth hummus, I polished off every last one of their chickpea fries. When food is this good, your stomach finds a way!
It took me a while to make this restaurant favorite at home, because how does one even make chickpea fries?! Without a clue as to how these perfect bites were made, this recipe was always in my head, but never made it onto the table.
Then, I discovered the polenta fry and took a nod from their method.
For these chickpea fries you simply take chickpea flour and cook it like a poridge. Then you'll spread it out in a baking dish and let it set in the fridge. Once its set, the chickpea mixture can be cut into fry shapes and baked until they are golden brown and ready to hit the table!
One tip for making the chickpea fries of your dreams:
If you prefer crispier fries, cut the chickpea mixture into smaller, narrower fries. This will give you a greater crisp edges to creamy filling ratio.
If on the other hand you prefer the creamy interiors (I am in this camp!), cut larger fries to maximize the soft interior texture.

Perfectly golden brown and crisp with a creamy interior, these 3 ingredient baked Chickpea Fries are the perfect dinner side. Gluten free and vegan too!
Ingredients
- 1 cup chickpea flour
- 1 teaspoon salt
- 1 teaspoon thyme
- 1 teaspoon garlic powder
- 1 ½ cups water
- Avocado oil
Instructions
- Line a 9x9 baking dish with a parchment paper sling. Set aside for later.
- In a saucepan off the heat, whisk together the chickpea flour, salt, thyme, and garlic powder. Add in half the water and whisk until there are no clumps of flour left in the batter. Add the remaining water and whisk until smooth. Place the mixture over medium heat and cook, whisking constantly, until it becomes thick like oatmeal and the whisk exposes the bottom of the pot when stirring.
- Pour the mixture into the prepared pan and use a spatula to smooth out the mixture into one even layer. Place another piece of parchment over the top of the mixture and gently press it down. This keeps the fries from forming a skin. Transfer the dish to the refrigerator and let it chill for 2 hours.
- After the mixture has chilled and set, preheat the oven to 425 degrees. Remove it from the pan using the parchment sling. Remove the top layer of parchment and slice it into fry shapes. Grab a baking sheet and drizzle it with a generous amount of avocado oil to coat the pan. Line your fries up on the pan and bake for 12 minutes. Flip the fries and bake for another 12 minutes. Remove from the oven and serve.
