Aka fries that are perfectly seasoned, baked until crispy and brimming with flavor BUT are made out of humble delicious healthy parsnips instead of potatoes.
Let’s look closer at the hero of this Low Carb Jojo’s recipe: the parsnip.
Parsnips are kinda like carrots and kinda like potatoes. Except they are sweeter than carrots, less starchy than potatoes, and have their own special kinda flavor. Which to be honest, it not everyone’s favorite
BUT when seasoned with a special blend of garlic powder, onion powder and paprika, then baked, something magical happens. Their sweetness mellows out, the Jojo spices shine, they get crave-ably crisp. Ready to be served alongside burgers and plunged into ketchup.

Low Carb Jojo's – thick cut fries that are perfectly seasoned, crispy, and fluffy but made with low carb parsnips instead of potatoes! Baked instead of fried, around 100 calories per heaping serving, and only 18 grams of net carbs!
Ingredients
- 6 large parsnips, peeled and cut into 2-3 inch long wedges
- 2 tablespoons avocado oil
- 1 teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt
Instructions
- Preheat the oven to 425 degrees.
- In a large bowl (or directly on the sheet pan if you are me)toss the parsnips with the oil and the seasonings. Bake in the oven for 20-25 minutes until the parsnips are golden brown and the insides are soft while the edges are crispy. Serve and enjoy!
