It all started my Junior year of college. The dawn of the smoothie age. I fell in love with this quick and healthy breakfast, woke up craving a new cool and creamy concoction each morning, and invested in my first Vitamix blender (which is still purring like the day I bought it over 5 years ago!)
I loved how different smoothies could be! They could be made creamy with banana, almond milk, and peanut butter, or light and fruity with some pineapple and fruit juice. They could taste like a decadent dessert or a mean green machine!
As the years have ticked by, my love for smoothies has not changed, but the type of smoothies I drink has. Instead of fruit forward drinks, I tend to reach for lower sugar ingredients to make breakfast drinks like this Low Sugar Sweet Potato Pie Smoothie.
I love a good fruit-filled smoothie, but sometimes after drinking one for breakfast, I find myself hungry again within a few hours. To keep myself reaching for a mid-morning snack, I tweaked and tested my liquid breakfast until I found something that would keep me full until lunch.
This Low Sugar Sweet Potato Pie Smoothie smoothie is fruit-free, and full of protein, fat, and fiber to provide prolonged energy. Plus it tastes like sweet potato pie, so there's that too ;)

Ingredients
- 1 cup frozen cauliflower
- 1 cup almond milk, (more for a thinner smoothie)
- ¼ cup frozen sweet potato
- 1 tablespoon almond butter
- 1 serving vanilla protein powder
- 1 tablespoon ground flaxseed, (optional)
- ¼ teaspoon cinnamon
Instructions
- Add all the ingredients to a blender. Blend until smooth. Serve topped with granola, if desired.
