Nothing quite reminds me of summer like a long hot day on the water and a refreshing glass of lemonade. Since I can't head to the water each  day this summer - though I am tempted to abandon my job and pitch a tent by the lake with a jug of lemonade for the next two months - I am sipping this refreshing summer sipper all day long to bring the sunshine inside.

Matcha Basil Lemonade might sound fancy, and boy does it taste fancy (in the good way), but I am happy to report that it is much easier than pie.

All you have to do is soak your whole basil leaves (no chopping, dicing, or pureeing FTW!) in hot water to unlock their subtle flavors. You'll also add the honey in with this step so there's no perpetual stirring of the Matcha Basil Lemonade to get it to dissolve.

The hardest part? Squeezing fresh lemons. But even that is made 100% easier with one of these handy dandy lemon squeezers. Fresh lemon juice in 60 seconds, here we come!

Let me just end this post by saying that I may have added a shot of vodka to this Matcha Basil Lemonade once or twice. Or three times. And the verdict, delicious.

Description

10 minute Matcha Basil Lemonade is a refreshing summer drink sweetened with honey! This healthy beverage is paleo and full of antioxidants.


Ingredients

Scale
  • 10 basil leaves
  • 2 cups boiling water
  • ¼ cup honey
  • ½ cup fresh squeezed lemon juice
  • 1 teaspoon matcha


Instructions

  1. Place the basil and boiling water in a bowl and steep for 10 minutes. Strain out the basil and stir in the honey. Place the matcha in a small bowl. Add in ¼ cup of the basil water and mix with a bamboo whisk until the matcha is smooth and clump free.
  2. Add the matcha back into the basil water along with the lemon juice and 2 cups of cold water. Stir to combine, pour over ice, and serve.
