Breakfast time can be hectic time. When I was working an office 8-5 with a 45 minute commute both ways, I needed something fast and easy. And preferably something that would keep my grumbling stomach quiet until lunch - or at least until my 11am chocolate break.
This was surprisingly difficult criteria to fulfill. If I found something fast, it would leave me hangry by my second meeting of the day. If it was filling, it required 30 minutes to prepare. Was my goldilocks breakfast out there?
I found the morning meal that was juuuust right when I discovered this Paleo Superfood Cereal! It is filling, fast and even packs in great flavor and nutrition!
This recipe originally began as my Superfood Cereal which was published circa 2016. Since then, this breakfast has stayed a staple in my life, but in true I-can't-follow-a-recipe fashion (even when it's my own!), I've made a few tweaks since then.
This Paleo Superfood Cereal is grain free, full of healthy fats, still vegan, and is even raw. Which also means no-cook. Which makes this morning rusher verrrry happy.
What I like to do with this recipe is make a full batch, shake it up, and store it in the fridge. Then on busy mornings (aka every morning), I just pull it out, pour over some milk, add some fruit if I am feeling fancy, and dig in. Thanks to this Paleo Superfood Cereal I am out the door ten minutes later.

Ingredients
- 1 cup almond meal
- ¾ cup chopped pitted dates
- ½ cup unsweetened shredded coconut
- ½ cup freeze dried blueberries
- ¼ cup flaxseed meal
- ¼ cup chia seeds
- ¼ cup cacao nibs
- ¼ cup sliced almonds
Instructions
- Add all the ingredients into a jar or lidded storage container and shake to combine. Store in the fridge for quick and easy breakfasts.
- In the morning, add a heaping ½ cup to a bowl. Top with milk and stir. Let sit for 5 minutes to plump up. Add berries and more milk if desired. Serve.
