What a name on this one.
I thought about calling this "Chocolate Chia Seed Pudding." It sounds great, but what about that healthy punch of greens!?
But calling it "Green Chocolate Chia Seed Pudding" seems a touch too healthy. Like, what if I can taste those greens? What if I can see those greens? What if this is not the delicious, creamy, chocolatey breakfast of our dreams?! (Spoiler alert: It is :)
Hence, Sneaky Greens Chocolate Chia Seed Pudding was named. It is all the flavor of chocolate, and all the health benefits of the greens.
Which, for the record, you cannot cannot cannot taste. Like wait, there are GREENS in my Chocolate Chia Seed Pudding?!
This absolute magic happens because we blend the spinach until it is broken down into a teeny tiny million-bazillion-hundred-trillion small pieces, before swirling it into the chia seeds. These tiny pieces give our bods TONS of nutrition, and our tastebuds zero flavor.
And if you are worried about texture, like the sad mornings when we don't blend our green smoothies 100% smooth and have little floating chunks of green leaves that cling to the roof of our mouth and get stuck in our teeth, have no fear. The spinach is blended with creamy coconut milk, and buttery avocado (more vegetables!), for a super creamy no-green-fleck texture.

Description
This Chocolate Chia Seed Pudding recipe is rich, chocolatey, and sneaks in a whole serving of greens! This vegan and gluten free recipe can be made in 10 minutes!
Ingredients
- 1 large avocado
- 2 cups spinach
- 2 cups coconut milk ((from a carton))
- ¼ cup raw cacao powder
- 2-4 tablespoons maple syrup (, adjusted to taste)
- 1 teaspoon vanilla extract
- ½ cup chia seeds
Instructions
- Add all the ingredients, except the chia seeds, into a blender and blend until silky smooth, scraping down the sides as needed.
- Pour the mixture into a bowl and whisk in the chia seeds. Cover and let chill in the fridge for 4 hours, or until the chia seeds have plumped up. Serve with desired toppings.

I made this recipe and it was delicious. But my version seems a bit greener than yours, which looks decidedly chocolatey. Can you give the amount of spinach in weight...either ounces or grams? I'm not sure if I'm measuring 2 cups of spinach the same way you are.
Either way...brown or green...this tastes good. I wonder if a St. Patrick's version with a bit of mint extract would work?

Hi Lisa, Great question! I loosely packed the cups, about 40 grams total. But as you discovered, this recipe is quite adaptable! Another factor could be the brand of cocoa/cacao powder. I have found some are more intensely colored than others.
LOVING the idea of mint extract for St. Patrick's day. I am thinking you could even use fresh mint leaves too and blend them in with the spinach. It would be fun either way! Happy cooking!
