This Strawberry Peach Chia Pudding is a way back playback to one of the first recipes I ever posted on the blog. It was 2014, chia seeds had just migrated from our Chia Pets onto our dinner plates, and everyone was bonkers for this superfood.
It is still a wonder that we took this gelatinous little seed and made it into an edible food, let alone one that we were all crazy about. My first attempts at chia pudding were questionable, but by the time I posted this recipe, I had nailed it. The magic was real. I found that if I mixed chia seeds with enough creamy coconut milk
and coconut yogurt, they became a tasty breakfast pudding.
Cha-Cha-Cha Chia for the win.
Not only were chia seeds a newcomer to the scene, but so was this blog, and this blogger had no idea what she was doing.

Three years ago when I posted this recipe, I had no idea how to use my camera, food styling was a foreign idea, and lighting wasn't even a thought that crossed my mind. I knew what good food photography was; I just didn't have a clue how to do it.
But, despite numerous food photography disasters like this one, I kept on keepin' on, and eventually learned a thing or two. It wasn't overnight. There wasn't one magical trick that turned it all around. It was the fact that I continued to pick up my camera every day.
This blog has taught me a lot of things, and one of my biggest takeaways is the power of years. Not days, not weeks, not even months, but the long game - years. I heard this Bill Gates quote a while ago, and it really struck a cord:
“Most people overestimate what they can do in one year and underestimate what they can do in ten years.”
So, whatever you are doing, keep it up. Whether it is growing a business, starting a new hobby, or getting fit, the days will add up. You might not see any progress over a week or a month, but when you stand and look back over a few years, you might be astounded at what you see.
So, if you are discouraged by lack of progress, keep it up, you will eventually see results. Or, if you have been working hard for a few years, take a moment to turn around and appreciate all you have accomplished - you deserve it.
Now, lets chat some more about this Strawberry Peach Chia Pudding.
I have certain requirements when it comes to breakfast. Breakfast has to be healthy with enough protein to keep me going until lunch. I often don’t have time to grab a snack between my early morning breakfast and noontime lunch. If I have a sub-par breakfast leaving me hungry between these two meals, look out! In this situation I sometimes, okay, okay, often get hangry. The hunger horns come out and I am not a friendly person to be around.
Breakfast also needs to be easy to throw together in the morning. Lazy weekend breakfasts are one of my favorite things in the world, but come weekday mornings I need a quick morning meal.
Finally, and probably most important, breakfast needs to be delicious. This Strawberry Peach Chia Pudding meets all of those requirements. It’s packed with great nutrition, easy peasy to throw together, and one hundred percent delicious.

Description
Strawberry Peach Chia Pudding is a 5 minute, 2 step, make ahead breakfast. This healthy recipe is dairy free and sweetened with natural ingredients.
Ingredients
- 1 cup plain coconut milk yogurt OR plain almond milk yogurt
- 1 cup unsweetened vanilla coconut milk (the kind in the carton, not the can) OR unsweetened vanilla almond milk
- 2 tablespoons pure maple syrup
- 1 teaspoon pure vanilla extract
- ⅓ cup chia seeds
- 1 peach
- 5 medium strawberries
- Granola, for serving (optional)
Instructions
- In a lidded container combine the yogurt, coconut milk, maple syrup, and vanilla. Stir in the chia seeds, making sure there are no clumps. The mixture will be very thin. Place the lid on the container and allow it to set up in the fridge overnight. Stir the mixture again right before you go to bed, if you can. This will insure that your pudding won't have clumps in the morning.
- In the morning give it one last stir and chop your peach and strawberries into cubes. Add a layer of strawberries into your serving glass. Top with the chia pudding, and then the peaches. Sprinkle on some granola and serve.
