These tacos are a spicy, saucy, perfect any-night-of-the-week kind of dinner!
Think: crave-able buffalo sauce that's not too spicy and not too mild, coating juicy pulled jackfruit. Nestled into a soft warm corn tortillas with heaps of crunchy celery slaw and drizzles of cooling vegan ranch. From "what should I make for dinner" to first bite in 30 minutes!

Ingredients in vegan buffalo jackfruit tacos:
This list appears a bit lengthy, but I swear this recipe comes together in less than 30 minutes! And is made from mostly pantry staples.
For the buffalo jackfruit you'll need:
- a can of young green jackfruit
- ½ cup veggie broth - you can sub veggie bouillon or even water
- ¼ cup Franks hot sauce - or other cayenne pepper hot sauce
- vegan butter or coconut oil
For the dairy ranch dressing...
You can buy pre-made vegan ranch (Trader Joe's has a great version!), or whip up this pantry friendly version at home. Made with:
- coconut cream - from the top of a can of coconut milk or a can of coconut cream
- red wine vinegar - for some brightness
- olive oil - or any other oil you have on hand
- and from your spice cupboard, some garlic powder, dried dill, parsley, and chives
For the slaw/serving:
- shredded cabbage - keeps like a dream in the fridge!
- celery
- and some ranch dressing
- your favorite tortillas
How do you make buffalo jackfruit tacos:
Our first order of business is to get the jackfruit drained and into a pan along with the veggie broth. Cover the pan and let it simmer until the liquid has absorbed and the jackfruit has softened.
While the jackfruit is simmering, stir together the 5 minute ranch and toss the slaw.
Next up is my favorite tip: use a potato masher to mash the jackfruit. The mashing action breaks the jackfruit into perfect effortless shreds! And in lieu of a masher, you can use a fork too.
Add in the buffalo ingredients and cook, stirring constantly, until the sauce coats the jackfruit.
Pile the jackfruit into warmed tortillas. Top with slaw and ranch! Dig in and ENJOY!

Ingredients
For the ranch:
- ¾ cup coconut cream (from the top of a can of coconut milk or a can of coconut cream)
- 2 tablespoons extra virgin olive oil
- 2 tablespoons water (you can use the coconut water from the can!)
- 1 tablespoon red wine vinegar
- 1 teaspoon dried chives
- ½ teaspoon dried parsley
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon dried dill
- ¼ teaspoon black pepper
For the tacos:
- 1 (20)oz can young green jackfruit, drained
- ½ cup vegetable broth
- ¼ cup Frank's Hot Sauce (or other cayenne pepper hot sauce)
- ¼ cup vegan butter or coconut oil
- 2 cups shredded cabbage
- 1 cup chopped celery
Instructions
- Add the jackfruit and veggie broth into a nonstick skillet over medium heat. Cover the pan and let it simmer until the liquid has absorbed and the jackfruit has softened, about 10 minutes
- While the jackfruit is simmering, stir together all the ranch ingredients. This makes extra ranch and will keep in the fridge for 7-10 days.
- Next, make the slaw. Add the cabbage, celery, and 6 tablespoons os the ranch to a bowl and stir to combine. Set aside.
- Once the jackfruit has softened, use a potato masher to mash the jackfruit. The mashing action breaks the jackfruit into perfect effortless shreds! And in lieu of a masher, you can use a fork too. Add in the buffalo ingredients and cook, stirring constantly, until the sauce coats the jackfruit.
- Pile the jackfruit into warmed tortillas. Top with slaw and ranch! Dig in and ENJOY!
