Honey Chipotle Cauliflower Tacos are the easiest and most flavorful dinner recipe! Made on just one sheet pan with 5 ingredients!

I cannot even explain the magic that happens when you toss cauliflower and chickpeas onto a sheet pan and rub them down with a 2 ingredient sauce and roast them until they are crispy, golden, and tender. They are sweet, smokey, and slightly spicy gems that get tucked into soft corn tortillas (which get warmed on the same sheet pan!), and garnished with buttery avocado.

This is a dinner that is low on effort and BIG on rewards. In no world should this 5 ingredient one sheet pan wonder taste this good!

And besides flavor, there are about a HUNDRED other reasons to love these tacos!

  • Just 10 minutes of hands on time! Toss it in the oven and pour yourself a glass of wine!
  • Full of healthy ingredients like superfood cauliflower and protein packed beans.
  • Great for more than just tacos! Toss any of the leftover chickpea cauli mixture onto salads, grain bowls, wraps, and even avocado toast! (I can vouch that the last option is very very good!)
  • The cleanup on this recipe is one sheet pan, a bowl to mix the sauce in and maybe a cutting board and a knife. #winnning
  • Did I mention FIVE INGREDIENTS yet? Three of which come in a can/jar and are probably already in your pantry?!

How to make Sheet Pan Honey Chipotle Cauliflower Tacos:

Guyssssss, this one is easy, but there are a few tricks to make this dinner even simpler!

One: chop your cauliflower into small bite sized pieces. The smaller the little florets, the quicker this dinner cooks. Ideally, you want them to be slightly larger than the chickpeas. This = fast cooking time and an optimal crispy golden outside to soft inside ratio.

Two: Really rub the honey chipotle sauce into the cauliflower and chickpeas. You want it to hug every curve and crevice for the biggest flavor possible.

Three: When there are 5 minutes left of cook time, toss your tortillas onto the sheet pan! Yep, get them right on top of the chickpeas and cauliflower all warm and cozy. This saves time, dishes, and makes the tortillas perfectly soft. They end up with a kiss of the sauce on their underside, but just be sure to pile on the filling to this side for a sticky-hands free dinner.

Description

Honey Chipotle Cauliflower Tacos are the easiest and most flavorful dinner recipe! Made on just one sheet pan with 5 ingredients!


Ingredients

Scale
  • 1 head cauliflower, cut into small bite sized pieces
  • 1 (15) oz. can chickpeas, drained and rinsed
  • 2 tablespoons finely chopped chipotles in adobo sauce
  • 4 tablespoons honey
  • 2 tablespoons avocado oil
  • 1 teaspoon salt
  • 8 tortillas
  • Avocado for serving, optional

Instructions

  1. Preheat the oven to 425 degrees and line a sheet pan with a silicone mat or parchment paper.
  2. In a small bowl, whisk together the chipotle, honey, oil, and salt.
  3. Spread the chickpeas and cauliflower out on the sheet pan and pour on the sauce. Toss until everything is well coated with sauce. Place in the oven and roast for 35 minutes or until the cauliflower and chickpeas are tender and golden brown, stirring halfway through.
  4. When there are 5 minutes of cooking time left, add the tortillas to the pan in a single layer on top of the cauliflower and chickpeas so that they warm through.
  5. Remove everything from the oven, assemble the tacos, and serve!

    Another amazing recipe! When I don't have chipotles in adobo sauce on hand, I also like to use smoked paprika with similar and equally delicious results!

    This has become a regular meal at my house. It is so easy and so tasty. I buy the cauliflower already cut up so it’s even easier. Definitely serve with avocado.
