Hey friends! As you are reading this I am parked on a beach somewhere in Southern California. I used to live in this sun-drenched, beach filled place and am down here for a week visiting some gal pals, and boy, it is GOOD. It feels like summers last hoorah.
I am working on a dining guide for ya, so that if you are ever in the area, you can make a stop at some of my favorite spots to eat in San Diego, and lemmetellya, I've got a lot of them! But until then, I am sharing a twist on one of my all-time favorite things to eat when I am in San Diego, the Acai Bowl.
Did California invent the Acai Bowl? Was it made somewhere else first? I don't know, but something about acai bowls and this place just feel like they were made for each other. A hot day on the beach, waves crashing against the shore, a sand covered bum, and a creamy cool acai bowl. Do you get the picture?
It is the food to eat when it is too hot to eat. It is tropical, creamy, crunchy, and tastes exactly like what your body is craving.
BUT!!! Outside of the palm tree paradise that is a California beach town, finding a good acai bowl can be elusive. Enter, these Acai Bowl Popsicles.
If you are a dedicated smoothie maker, chances are you have had an acai bowl made at home. Throw a little of this in the blender, a lot of that, blend until smooth and top with granola, fruit, a good drizzle of golden honey, and whatever wacky superfoods are floating around in our cupboards. I have done it a thousand times. I have loved it a thousand times.
But sometimes the real Lazy Girl in me comes out and I want to enjoy an acai bowl without all the blending fuss. Are there any others out there with 3pm acai bowl cravings that just don't have the time for that smoothie bowl prep and cleanup?

These Acai Bowl Popsicles are a 6 ingredient recipe that tastes like the tropics! Enjoy a healthy acai bowl anytime without having to clean the blender.
Ingredients
- 2 bananas
- 2 cups blueberries (frozen or fresh)
- 1 cup chopped pineapple (frozen or fresh)
- 2 unsweetened acai packets
- 1 cup full fat coconut milk
- 1 cup gluten free granola
Instructions
- Add all of the fruit and coconut milk into a blender. Blend until smooth and pour into popsicle molds. To the top of each mold, sprinkle on the granola. Freeze for 30 minutes, add in popsicle sticks. Freeze overnight or until solid.
Wow this sounds like a dream! I am a huge fan of acai bowls, in fact I know I am spending too much money on them ha! Can't way to try this out <3
