Caramel Pumpkin Spice Latte

This Caramel Pumpkin Spice Latte is a traditional PSL with a luxurious caramel twist! Naturally sweetened, dairy, and guilt free!

The warming spices, sweet pumpkin, rich coffee, and pop of deep caramel flavor all swirled through a warm mug of creamy milk is the best of Fall in a mug!

  • Can be customized to your desired caffeine levels: double shot, half caf, decaf, etc.!
  • Most importantly, you can enjoy a PSL anytime from the comfort of your home!

Ingredients & substitutions:

  • Medjool dates – medjool dates have the best flavor and blend the easiest into our caramel. You can use another type of dates, but if they are dry, you will want to soak them in hot water for 5 minutes and drain before using.
  • Pumpkin puree – or go crazy and try sweet potato!
  • Pumpkin pie spice - for nice warmth and subtle sweetness! Note that pumpkin pie spice blends can vary in flavor. So, you may need to adjust the amount up or down. We tested this recipe with Trader Joe's and Spice Islands brands - both work well.
  • Full fat coconut milk – lite coconut milk should work too.
  • Espresso – or strong brewed coffee, or instant coffee (which is great for brewing strong and you may have some left over from the whipped coffee trend) or decaf.
  • Milk of choice – I prefer oat, soy, or almond. Any kind you like will do.

How to make a homemade pumpkin spice latte:

Make the caramel: Add the dates, pumpkin puree, pie spice and coconut milk to a blender or food processor. Blend until. If using a processor or regular blender, you will want to strain the caramel through a fine mesh strainer to remove any date-skin flecks. Use a spatula to press it through. And don’t skip! Date-skin floaters are a latte ruiner!

Make your coffee: Brew your coffee as you’d like. Espresso, decaf, instant, etc.

Mix and heat: Heat your milk in a small sauce pot. Add in a spoonful of the pumpkin caramel and whisk. Add in the coffee, stir and once warmed through, enjoy!

So you can drink it anytime you’d like!

Also, because it gives you control over the quality of ingredients. Instead of sugar, this latte is sweetened naturally with dates. It uses real pumpkin. You can customize the milk and sweetness level to suit your tastes and dietary preferences. And can be made with your favorite coffee – even decaf!

Can you make it dairy free?

Absolutely! The caramel is naturally dairy free and you can choose any non-dairy milk that you like. We love oat, soy, and almond the best!

In addition to being dairy free, it makes this recipe vegan and paleo, too!

Leftover pumpkin caramel?

Place the caramel in a lidded container and store it in the fridge for 7-10 days. Use it to make more Caramel Pumpkin Spice lattes, or to top ice cream, dip apples, and more!

Ingredients

Scale
  • 1 cup pitted medjool dates, packed
  • ½ cup pumpkin puree
  • 1 tablespoon pumpkin pie spice
  • ⅓ cup full fat coconut milk
  • 1–2 shots espresso OR ¼ cup strong coffee OR 1-2 teaspoons instant espresso powder
  • 1 ½ cups milk of choice – I prefer oat, soy, or almond. Any kind you like will do.

Instructions

  1. Make the caramel: Add the dates, pumpkin puree, pie spice and coconut milk to a blender or food processor. Blend until smooth, scraping the sides as needed. If using a processor or regular blender, you will want to strain the caramel through a fine mesh strainer to remove any date-skin flecks. Use a spatula to press it through. And don’t skip! Date-skin floaters are a latte ruiner!
  2. Make your coffee: Brew your coffee as you’d like. Espresso, decaf, instant, etc.
  3. Mix and heat: Heat your milk in a small sauce pot. Add in 2 tablespoons of the pumpkin caramel and whisk. Add in the coffee, stir and once warmed through, enjoy!

Notes

    How long will this keep in the fridge? Can it be frozen to use later?

      Hi Donna, great questions! It will keep in the fridge for 7-10 days and the freezer for up to 3 months.
