This Chickpea Flatbread is one simple and easy recipe, but don't let that fool you. The flavors packed into this 3 ingredient wonder are far beyond what you might expect. The flatbread is slightly nutty, perfectly seasoned, and ready for a variety of toppings to be piled high.

Not only is this weeknight recipe fast, it is absolutely packed with protein! Each flatbread has almost 9 grams of protein plus loads of fiber. They are also gluten free, vegan, grain free and decidedly delicious.

This Chickpea Flatbread is impossibly easy to make. Think you don't have time to make flatbread on a Tuesday night? Normally I would agree with you, but this flatbread is changing the game!

This flatbread can be on the table in 20 minutes. That's right. Two. Zero.

And unlike most gluten free recipes, this bread will have you reaching for just one flour. And you'll be able to count all the other ingredients on one hand. To your garbanzo bean flour you'll add some oil, water, salt, pepper, and an optional sprinkle of Italian seasoning.

Then while your Chickpea Flatbread is baking away, grab some veggies for topping. My dream flatbread has mashed avocado, sliced cucumbers, sprouts, a dash of vinegar and some salt and pepper. But you cannot, I repeat cannot, go wrong here. Throw on any spreads, sauces, and veggies you like. This flatbread is your oyster.

Description

Ingredients

Scale
  • 2 ½ cups chickpea flour
  • 2 cups water
  • 3 tablespoons extra virgin olive oil
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • Sprinkle of Italian seasoning

For topping:

  • Avocado or hummus
  • Vegetables of choice
  • A dash of vinegar
  • Salt & pepper
  • Any spread, sauce, or veggie that your heart desires!


Instructions

  1. Preheat the oven to 400 degrees and line a sheet pan with a nonstick silicone mat.
  2. In a large bowl, whisk together all of the flatbread ingredients except the Italian seasoning. Pour the batter onto the baking sheet and use a spatula to spread it out into an even layer. Top with a sprinkle of Italian seasoning. Bake in the oven for 10 minutes or until the flatbread is set and does not jiggle when the pan is shaken.
  3. Remove from the oven and let cool for 5 minutes. Cut into six rectangles and top with desired toppings. Serve.

      Hi Gail, you can store it in the fridge for 1-2 days, or stash it in the freezer for much longer.

    Can I line the baking sheet with parchment paper instead of the non-silicone mat?

      Hi Kim, Parchment paper should work. Just be sure to brush or spray it (and the sides of the pan) with oil to prevent sticking. Happy cooking!

    This seems interesting! I'd like to try, but wonder why it can't be kept longer? It looks like a crisp/cracker, but maybe it isn't. Do you think it might be dehydrated, and then possibly be kept longer? Or is there any reason as to why this may not work?

      Hi Anne! It's actually a flatbread with a much softer consistancy than a cracker. I would recommend freezing it for longer storage. Happy cooking!
