The sheer fact that I am writing to you from the middle of the sky is amazing. The first world at its finest.
After a bought of weather scares and canceled flights, I am currently en route to Haiti as scheduled. Special shout out to Mary at the airline desk for working her magic to get us to our destination. I will be in Haiti for a week, working with Grace So Amazing Ministries, but by the time you are reading this I will be back and sleeping in my own soft bed again.
So here is a cheers to a safely completed trip with a couple of Kombucha Floats.
This Kombucha Float is just about as hippy dippy as can be. Instead of vanilla ice cream and root beer, the OG of all floats, this drink is sporting effervescent Kombucha and non-dairy coconut milk ice cream. Then we throw in a handful of bright and juicy summer berries.
The kombucha gets frosty where it touches the ice cream, the berries burst like little flavor bombs when you bite into one, and after a few spoonfuls the ice cream begins to melt into the kombucha creating this pink drink concoction that tastes a little like the strawberry milk of our childhoods.
I wish I could say that this idea was all mine, but I first came across the Kombucha Float when I was living in San Diego. North of the city, there was a fantastic grocery store called Roots that made my organic food loving heart go pitter patter every time I marched through the front doors. Roots has a juice bar that serves up these floats on the daily. And lemme tell you, I was in there just about on the daily as well.
I learned pretty quickly that a cold and creamy Kombucha Float was the best was to beat the summer heat. The coconut ice cream mixed with the refreshing kombucha was bubbly, creamy, and fruity.
This Kombucha Float recipe can also be tailored to your flavor preferences. Some stores even sell a root beer flavored kombucha for a traditional twist. I can't imagine that ginger kombucha with fresh peaches and coconut ice cream would be a bad idea either.Can someone please try and report back? I am dying to know.

Ingredients
- 1 pint coconut milk ice cream
- 32 ounces berry flavored kombucha
- 1-2 cups fresh summer berries
Instructions
- Layer the coconut milk ice cream into 4 glasses with the berries. Top with kombucha and serve.
