I was half awake, just stumbling out of my morning stupor when I had the idea for this smoothie. I think I dreamt it, because as soon as I blinked my eyes open, my stomach was growling and my heart already knew what it wanted: a Tropi Kale Smoothie. To oblige my growling stomach, I stumbled into the kitchen and fished the ingredients out of the freezer.
Things were going well. No problems at all. Until I was splatter painted by green goo that came whirling out of the blender at a velocity that made any attempt to shield myself an afterthought. I mopped the goo off my eyes and peered at the kitchen. One thing was clear, I was not the only thing splatter painted.
The silver lining was that a few of the splatters had landed square on my mouth, and this Tropi Kale Smoothie tasted good.
After mopping up the kitchen I headed to the bathroom to wash off the sticky remnants of my breakfast. Between the two rounds of shampoo needed to get the sticky fruit out of my hair, I decided to ditch the smoothie and opt for a less hazardous breakfast: oatmeal.
But, long showers have a way of putting things into perspective, and after a good lather, I remembered the taste of my attempted breakfast thanks to a few well-placed splatters. The sweet fruit, the tropical flavor, the cool and creamy texture bounced around in my mind.... Tropi Kale Smoothie for breakfast it is. Not even the fear of going Jackson Pollock on my kitchen a second time could keep me from my smoothie.
I am happy to report that the blender lid held in place, and 100 percent of my Tropi Kale Smoothie made it into my glass. Second times the charm.
The real MVP of this Tropi Kale Smoothie (sorry blender, you are not even in the running) is the canned coconut milk. It adds an intense creaminess and a real tropical flavor. It also gives the smoothie some staying power as it helps to stabilize our blood sugar and can keep us fuller longer.
Plus, the way that it goes with the sweet mango, pineapple, and banana, is something out of a love story. Bonus points if you serve the smoothie with a decorated rim. Move over margaritas, this Tropi Kale Smoothie can play. Just take a lemon, and run it around the rim of the glass, this will act as the glue. Then dip the top into some coconut shreds before you serve your smoothie.

Ingredients
- 2 cups packed kale
- 1 small banana (previously peeled, chopped, and frozen)
- ½ cup frozen mango
- ½ cup pineapple
- 1 inch ginger (peeled and roughly chopped)
- ½ cup full fat coconut milk
- ½ cup water (more as needed)
Instructions
- Add all the ingredients into a blender and blend until smooth. Serve.
