File this under strange things that Laurel (thats me!) says on the regular.
Other phrases include: "I just made my own vegan yogurt," and "This would be better with coconut bacon."
But if you could never imagine yourself craving tofu in one hundred thousand trillion years, there was a time when I couldn't either. The tofu I knew was spongy, soggy, and tasted like a wet sock. Not my idea of a good meal.... Until I stumbled upon what has since become one of my favorite foods: baked tofu.
Baked tofu takes the soggy white brick of soy and transforms it into a chewy, toothsome flavor-packed, crave-able dish. There twoa few simple steps to perfect Maple Sriracha Baked Tofu: marinading and basting.
The marinading: This Maple Sriracha Baked Tofu gets flavored with soy, maple, sriracha, and garlic. We whisk together all the ingredients and then let the tofu absorb all the flavors overnight.
The basting: After the tofu has marinated, we reduce the leftover marinade until the flavors concentrate and it becomes a thick glaze. While the tofu is slowly baking its way to perfection, we glaze it every 30 minutes for maximum sticky/sweet/spicy flavor.
Now, sriracha can intimidate those who don't love to bring the heat! If you tend to shy away from spice, this recipe is adaptable. You can use anywhere from 1 tablespoon to 3 tablespoons (or even more if you'd like!) in the marinade/glaze. And if you have a complete adversion to spice, I am looking at you mom, then try this baked tofu recipe instead!
One of the best things about this recipe is its versatility. The number of things you can do with these glazed bites of flavor is endless.
Here are a few of my favorite ways to enjoy this Maple Sriracha Baked Tofu:
- Rice bowl: as pictured. Add some herbs or crunchy veggies for extra flavor and texture.
- Salad: choose your favorite greens and dressing add make it happen.
- Sandwich: two sliced of bread, a piece of lettuce, some sriracha mayo for good measure. Repeat as often as possible.
- Or eaten by the light of the fridge straight outta your meal-prep container. But not that I would know anything about this one. At all. In the slightest.

Ingredients
- ¾ cup maple syrup
- ½ cup water
- 3 tablespoons liquid aminos OR coconut aminos
- 1-3 tablespoons sriracha
- 1 block extra firm tofu
Instructions
- Whisk together all of the marinade ingredients.
- Slice the tofu into ½ inch thick squares and submerge them in the marinade. Cover and let marinade overnight in the fridge.
- The next day, preheat the oven to 300 degrees. Line a baking tray with parchment paper. Place the tofu on the baking tray, with a little space in between them so they aren't touching. Reserve the marinade. Place in the oven and bake for 30 minutes.
- While the tofu is baking, take the reserved marinade and heat it in a small saucepan over medium heat. Simmer until reduced by two thirds. The marinade will be thick and syrupy.
- Once the tofu has baked for 30 minutes, baste the top and sides of the tofu with the reduced sauce. Flip the tofu and baste the other side. Return the tofu to the oven and bake foe another 1 hour and 30 minutes, basting and flipping the tofu every thirty minutes. Serve.
