Ingredients
- ½ cup raisins plus 2 tablespoons, divided
- 1 cup raw cashews
- 1 cup gluten-free rolled oats
- 2 tablespoons honey OR brown rice syrup
- 1 teaspoon cinnamon
- ½ teaspoon vanilla extract
- ¼ teaspoon salt
Instructions
- Add ½ cup of the raisins to a bowl and cover with hot water. Let steep for 5 minutes then drain.
- Add the cashews into a food processor fitted with an "S" blade. Process until the nuts are broken down into the texture of large sand.
- Add in the soaked and drained raisins, oats, honey, cinnamon, vanilla, and salt. Process until a dough comes together. Pour the dough into a bowl and stir in the remaining 2 tablespoons of raisins.
- Using a tablespoon sized scoop, roll the dough into balls. Store in the refrigerator for 7-10 days. Enjoy!
