These delicious little bites taste just like an oatmeal raisin cookie in cookie dough form. They are soft and sticky and perfectly sweet with pockets of chewy raisins, interesting texture from the cashews, and nuttiness from the oats. 

Are made with energizing fruit, whole grains that are packed with fiber, and nuts which bring the healthy fats. They are a satiating bite that is somehow healthy despite tasting like dessert!

These bites are dangerously easy to make!

Throw the 6 simple ingredients into the food processor and crank that baby until a dough ball forms. Roll into balls and you are finished. In and out of the kitchen in 10 minutes with a dozen perfect cookie dough bites ready to be eaten. 

Store any uneaten bites in the fridge. Not only is a cooled bite delicious, but they will keep for 7-10 days... if they make it that long!

Oatmeal Raisin Cookie Dough Bites are a healthy 6 ingredient recipe! Made with whole grains, nuts, and natural sweeteners but taste just like dessert.


Ingredients

Scale
  • ½ cup raisins plus 2 tablespoons, divided
  • 1 cup raw cashews
  • 1 cup gluten-free rolled oats
  • 2 tablespoons honey OR brown rice syrup
  • 1 teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Add ½ cup of the raisins to a bowl and cover with hot water. Let steep for 5 minutes then drain.
  2. Add the cashews into a food processor fitted with an "S" blade. Process until the nuts are broken down into the texture of large sand.
  3. Add in the soaked and drained raisins, oats, honey, cinnamon, vanilla, and salt. Process until a dough comes together. Pour the dough into a bowl and stir in the remaining 2 tablespoons of raisins.
  4. Using a tablespoon sized scoop, roll the dough into balls. Store in the refrigerator for 7-10 days. Enjoy!
