Noodles + a creamy dressing + a few crunchy veggies = the only kind of salad I want to eat right now.
It is also served cold, because hot summer days! And somehow this salad, that is not a salad, eaten cold with just enough crunchy raw veggies to get us safely into salad territory, and a cool creamy dressing just feels so right, so good, so summer backyard barbeque.
Soba noodles are the star of this Thai Red Curry Soba Noodle Salad show. Have you ever heard of soba noodles?
I am in love love love with them (as seen by these three recipes). They were one of the first gluten free noodles that I tried and actually liked. But this was back in the dark ages when gluten free noodles boiled into soggy bitter mush. But not soba! They are the OG gluten free noodle and have been served around Japan for yearsssss.
I am so glad this noodle trend finally caught on in the western world, because our lives just wouldn't be the same without soba.
The noodles are made from buckwheat and are slightly nutty and have a toothsome texture that you can really bite into. They cook in 5 minutes and can be eaten hot or cold. Noodle MVP right here.
Our noodles might be the MVP, but this sauce is the all star team that supports our Thai Red Curry Soba Noodle Salad. It is creamy, nutty, and so full of flavor. It makes me want to lick the spoon, lick the bowl, and then lick my fingers to get every last morsel.
The base of the sauce is tahini. Which, I will be the first to admit, is a bit odd. Tahini is a Mediterranean ingredient used in things like hummus, but stick with me! It is ground up sesame seeds, and do you know who else uses sesame in their cooking? The Japanese and the Thai. They basically do everything right.
So, this Mediterranean ingredient gets added to our Thai Red Curry Soba Noodle Salad and gives it a creamy texture and nutty flavor that pairs so well with our nutty soba noodles.
Then, to our tahini party, we add in Thai Red Curry Paste because this is Thai Red Curry Soba Noodle Salad after all. This paste is basically an authentic shot of flavor. It is a secret blend of spices along with lemongrass, ginger, and lime. I never have all those ingredients on hand, because, hello, I am BASIC. But this curry paste always has my back.
So go ahead and whip yourself up this creamy, cool, nutty, flavorful delight of a salad. It can be made in less than 30 minutes and once stored in the fridge, can provide meals and meals of good eating.

Description
This Thai Red Curry Soba Noodle Salad is a creamy cold noodle dish that is bursting with flavor! This gluten free and vegan recipe can be made in under 30 minutes.
Ingredients
- 8 oz soba noodles
- 1 cup shelled edamame
- 2 carrots (, julienned)
- 2 red bell peppers (, sliced into thin strips)
- ½ cup cilantro leaves
- 1 package baked tofu (, cubed)
For the sauce:
- ¼ cup raw tahini
- 3 tablespoons Thai curry paste
- 3 tablespoons unseasoned rice vinegar
- 2 tablespoons maple syrup
- 2 teaspoons liquid aminos OR tamari
- 1 teaspoon sriracha
Instructions
- Heat a large pot of water over high heat until boiling. Add in the soba noodles and cook until tender, about 5-7 minutes. Drain the noodles and rinse them with cold water.
- While the noodles are cooking, stir together the sauce ingredients.
- Toss the drained noodles with the sauce and then add in the remaining ingredients. Toss to combine well. Serve with sesame seeds to garnish, if desired.
Notes
- If you are gluten free, be sure to check your soba noodles before buying. Some brands use half buckwheat flour and half wheat flour in their noodles. I prefer this brand which I order online.
- If you have never cooked soba before, be sure to check the package directions. The noodles can cook in as fast as 3 minutes, so keep a watchful eye. They also stick together easier than regular noodles, so give them a good stir while they are cooking to break any clumps up, then rinse them in cold water right after they come out of the pot.
