Ive been laying out my Thanksgiving cooking timeline.

I’ve made my grocery list.

The countdown to my favorite holiday is on.

When a day is filled with free-flowing wine, copious amounts of pumpkin pie spice, and a football field long buffet table… How can it not be your favorite. If you are in need of some T-Day inspiration I have a recipe roundup of gluten-free, vegan, and delicious options for you. Whether your cooking an all veggie Thanksgiving or looking for a few allergy-friendly sides, here are 14 possibilities for you to whip up.

Number one: Kale Pumpkin Minestrone

With the addition of seasonal pumpkin and kale, this dish has a rightful place on the Thanksgiving table. It is hearty enough to serve as the main course for any veggie eaters that you are hosting, and works great as a side too.
