20 Minute BBQ Jackfruit Nachos

BBQ Jackfruit Nachos ready in 20 minutes!

Barbecue Jackfruit Nachos – crunchy tortilla chips loaded with spicy sweet BBQ jackfruit, melty vegan mozzarella cheese, crisp red onion, juicy sweet pineapple, and optional fresh cilantro and sliced jalapeño.

Some nights only nachos will do. Theirs no way to explain it, it’s more of a gut feeling. That only crispy chips with comforting melty cheese pulls can satisfy.

And some nights you need them plain Jane. Cheese, chips, done. But other times the ultra loaded, can-this-chip-hold-this-bite? nachos are the only way to go! And this plate with saucy spicy sweet jackfruit, crisp red onion, fresh cilantro, juicy and sweet pineapple, and oozy mozz is a classically comforting, taste bud tantalizing, new and old nacho mashup.

Reasons to love this recipe:

  • Keeping with our current theme, these puppies are pantry/fridge friendly! Grab those tortilla chips, canned pineapple, and jackfruit from the pantry. Snag some cheese from the fridge. Add in some veggies if you have em. Flexible and delicious.
  • 20 minutes MAX – assemble the nachos and into the oven they go. 10ish minutes later, dinner is served!
  • Flavors galore – the spicy sweet barbecue sauce is the perfect compliment to the melty cheese and sweet pineapple.
  • A one sheet pan meal. Everything gets tossed together right on the sheet pan. Leaving not a single bowl, pot or pan to clean.

Ingredients in Jackfruit Nachos:

  • Tortilla chips – pick your poison, I grabbed a bag of Siete this go around.
  • Barbecue jackfruit – you can certainly make your own (following this method for best results!) but to keep this a 20 minute meal, I used my favorite brand of pre-flavored BBQ jackfruit.
  • Canned pineapple – fresh could work too.
  • Vegan cheese – or regular cheese. Mozzarella complimented the flavors of the nachos like a dream.
  • Sliced red onion – or green onions, white onion, any onion sliced thin.
  • Sliced jalapeños and cilantro – optional toppings for added spice and freshness!

How do you make vegan nachos?

The general methodology is layer, layer, bake and enjoy!

Start with a nice layer of tortilla chips on a baking sheet. Top with dollops of jackfruit, chunks of pineapple, a sprinkle of red onions, and a nice heavy handful of vegan cheese. Don’t be shy. If you’re adding jalapeño slices, now is the time.

Into the oven for about 10 minutes or until the cheese is melty and the jackfruit is warmed through.

Sprinkle with optional cilantro and plate up a nice sized serving. Dive in and enjoy!

Description

Barbecue Jackfruit Nachos – crunchy tortilla chips loaded with spicy sweet BBQ jackfruit, melty vegan mozzarella cheese, crisp red onion, juicy sweet pineapple, and optional fresh cilantro and sliced jalapeño.


Ingredients

Scale
  • 1 bag tortilla chips
  • 1 can/package barbecue style jackfruit (or make your own with this method)
  • 3/4 cup pineapple chunks (caned or fresh)
  • 1 1/2 cups vegan mozzarella cheese
  • 1/4 cup chopped red onion
  • Optional cilantro and jalapeño slices

Instructions

  1. Preheat the oven to 350 degrees.
  2. Arrange the tortilla chips in an even later on a baking sheet.
  3. Top evenly with jackfruit, pineapple, cheese and red onion. Add on optional jalapeño slices.
  4. Bake at 350 for 10-15 minutes or until the cheese is melted and the jackfruit is warmed through.
  5. Top with optional cilantro and enjoy!
