While eating, I'll probably be thinking back to all those nostalgic memories as a child when we licked raw cookie dough straight outta the bowl and threw all caution to the wind! Now that I have left my reckless raw-cookie-dough-eater days behind me, this eggless version takes me right back - without the fear of food poisoning!

How do you make Grain Free Cookie Dough?
So glad you asked! This dough is a magic combo of casava flour, almond meal, and (your choice of) nut butter.
The cassava is light and fluffy. The almond meal is dense and nutty. Both are gluten free and balance each other out perfectly. The almond butter glues the dough together in the absence of eggs and butter adding richness.
Maple syrup swoops in with sweetness and a nice caramel note. A little vanilla goes a long way in adding a touch of gourmet sweetness. And chocolate chips are just necessary. But then again, I tend to think they're always necessary.
You can eat this dough straight outta the bowl with a spoon or roll it into little cookie dough bites for on-the-go snacking!

Ingredients
- ¾ cup cassava flour
- ½ cup almond flour
- ½ cup nut butter (peanut, almond, cashew...)
- 6 tablespoons maple syrup
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 2 tablespoons almond milk
- 2 heaping tablespoons dark chocolate chips
Instructions
- Add all the ingredients, except the chips, to a bowl and stir well to combine. You may find using your hands is the best way to get everything evenly mixed.
- Add in the chocolate chips and stir one more time. Grab a spoon and enjoy! You can also roll the cookie dough into bite sized balls for easy snacking!
