Glazed Asian Brussel Sprouts are a sweet, salty, rich, and sticky 30 minute side dish! Naturally vegan, paleo, and gluten free.

Buckle up brussel enthusiasts, step forward veggie curious, and even you sprout skeptics, this is brussel sprouts like you've never eaten before.

Oven "fried" brussel sprouts that are golden brown and crispy get tossed in a sweet, salty, spicy, and sticky Asian glaze that lovingly coats each leave and soaks into every browned edge for maximum flavor to sprout ratio. The glaze shines, the flavors sing, and these little green vegetables are about to steal your heart.

How do you make oven fried brussel sprouts?

With the right technique, we can achieve the texture of a fried brussel sprout without all the excess oil! 

To get that crispy fried texture the secret is in the oven temperature. We want to crank it up high so that the exterior of the brussel sprouts get crispy but the interior stays toothsome and not mushy.

The longer you cook brussel sprouts, the more sulfur flavor they take on. I recommend no more than 20 minutes in the oven at 425 degrees.

If the sprouts still aren't crispy at the 18 minute mark, turn on the broiler for the last two minutes to crisp them up. Watch them closely at this stage since the broiler can turn them from browned to burnt in the blink of an eye.

The second tip is to roast the sprouts cut side down. The cut side will caramalize against the hot pan and the leaves will crisp up due to the extra air flow.

Description

Ingredients

Scale
  • 2 lbs brussel sprouts, halved
  • 3 tablespoons avocado oil
  • ¼ cup water
  • 4 tablespoons coconut aminos
  • 2 tablespoons maple syrup OR honey
  • 1 ½ tablespoons liquid aminos or tamari
  • 1-2 tablespoons sriracha, to taste
  • 1 tablespoon mirin
  • 2 cloves garlic, minced
  • 1 teaspoon minced ginger
  • 1 teaspoon corn starch

Instructions

  1. Preheat the oven to 450 degrees. Toss the brussel sprouts and oil on a sheet pan until they are coated. Arrange the sprouts cut side down in a single layer. Bake for 18-20 minutes or until the sprouts are golden and crispy. If they still look green, broil them for 2-3 minutes to crisp them up.
  2. While the brussel sprouts are roasting, add the remaining ingredients to a sauce pot. Whisk well to combine. Heat over medium-high heat until the sauce simmers. Reduce to medium-low and simmer for 2-3 minutes or until the sauce has thickened. Remove from the heat and set aside.
  3. Toss the cooked brussel sprouts with the sauce and serve immediately. Enjoy!
