Can we all agree that it is the bread that makes a sandwich? A nice big slice of soft, delicious bread is literally what holds it all together. The bread can’t be too small or the sandwich becomes a hard-to-eat snack. It has to be just right.

And friends, I have found my dream bread! Udi’s® Gluten Free Multigrain Sandwich Bread and Udi’s® Gluten Free Soft White Sandwich Bread are just right. They make this Loaded Cream Cheese Veggie Sandwich.

Ever since it was love at first bite, these two loaves have been fully stocked in my freezer at all times.

Both of these loaves are my go-to for all things bread. After being gluten free for 5 years, I have tried many gluten free loaves—for better or for worse. Actually, all for worse. The soft texture and wholesome ingredients in Udi’s just can’t be beat.

I also love the size! Why are so many gluten free loaves so tiny? These slices are 30% larger, just like conventional sandwich bread but gluten free and without any artificial ingredients.

Even my husband, who is intolerant to brown rice, can easily enjoy Udi’s Soft White Sandwich Bread and still get in 8 grams of whole grains per serving! Being both gluten free and brown rice intolerant, he had practically said goodbye to all bread until Udi’s fortuitously came into our lives. Now he is enjoying a Loaded Cream Cheese Veggie Sandwich on the regular.

Then, after the bread, it is all about the spread. I think it is safe to say we have discovered the ultimate bread for our Loaded Cream Cheese Veggie Sandwich; now let’s chat about this luscious cream cheese spread.

It literally tastes exactly like my childhood favorite: garlic and herb cream cheese. The texture is perfect, the tang is just right, and it is infused with fresh herbs and garlic. It can also be whipped up in 5 minutes in just a blender.

Now that we have our cream cheese spread, which will help to hold all of our veggies between the bread, it’s time to pile on all the toppings!

The recipe calls for cucumber, romaine, tomato, carrots, and sprouts, which are a delicious combo. But feel free to go rogue here. Choose your favorite veggies and pile them on high.

And while you are customizing the veggies, you can also customize the bread. Instead of Udi’s® Gluten Free Multigrain Sandwich Bread, you could swap in Udi’s® Gluten Free Soft White Sandwich Bread. Both make one killer  Loaded Cream Cheese Veggie Sandwich.

Scale
  • 2 slices of Udi’s® Gluten Free Multigrain Sandwich Bread
  • 2 tablespoons Garlic & Herb Cream Cheese (recipe below)
  • 4 slices cucumber
  • 1 leaf of romaine lettuce
  • 1 slice tomato
  • 1/4 cup shredded carrots
  • 2 tablespoons sprouts

Instructions

  1. Spread one piece of bread with the cream cheese. Top with the veggies and the second slice of bread. Enjoy!

Description

This Garlic & Herb Cream Cheese tasted just like the grocery store favorite but is vegan, gluten-free, packed with protein and free of all artificial ingredients!


Ingredients

Scale
  • 1 package firm tofu, (drained)
  • 1/2 cup unsweetened dairy-free yogurt ((I used almond milk yogurt))
  • 1/4 cup melted coconut oil
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1 tablespoon chopped dill
  • 1 tablespoon chopped chives

Instructions

  1. Add all the ingredients to a blender except for the dill and chives. Blend until smooth. Transfer to a bowl and stir in the herbs. Chill in the fridge for at least 2 hours to set. The cream cheese will thicken up as it cools.

    This sounds yummy! Are the chopped chives fresh or dried? I have fresh now and want to make this without a trip to the store. I already have to sub garlic powder for fresh, not sure it will turn out as good, unless i wait until tomorrow after a trip to the store.

      Hi Kristine, I used fresh chives in the recipe, but dried would be good too! Garlic powder can be really strong, so I would start small and add more to taste. Happy new year!

      Hi Ines, this recipe really is so simple and full of flavor! For the tofu, I use firm tofu from the refrigerated section of the grocery store. Happy cooking!
